Food Binding with Transglutaminase
ACTIVA® is a series of tranglutaminase (TG) preparations that have been used in meat, poultry, and fish products for over 10 years.
For nearly three decades, ACTIVA® has been produced commercially. It is widely used by processors as well as chefs around the world to make better products and dishes that would otherwise be difficult to achieve. The TG creates bonds between specific amino acids to help build the binding structure. Simply add our ACTIVA® preparations using a slurry or dry application, place it into a mold or casing and allow the enzyme to react.
