ACTIVA® EB
ACTIVA® EB is a transglutaminase (TG) enzyme preparation that is formulated for binding, recombination or building texture in a diverse range of food materials such as red meat, pork and poultry. It can be used as a pre-hydrated slurry or as a dry powder depending on the application and the process. Because ACTIVA® EB is highly versatile, you can use it in most of your processes.
Processing Information
The dosage of ACTIVA® EB depends on the type of meat and possible previous or later processing steps (e. g. brine injection). 10 g ACTIVA® EB per kg of meat are diluted with 40 g to 50 g of ice-cold water.
After preparation of the ACTIVA® EB-water-slurry the filling process should be finished in approximately half an hour. During the filling and conditioning process, use a high level of pressure for your final application (remove all air in the mold).
ACTIVA® EB contain oxygen absorbers to extend shelf life and keep product in optimal condition. Please pay attention and avoid product contamination by removing these absorbers before ACTIVA® EB addition.
Keep sample packages in a cool and dry place. Once opened, reseal unused product – preferably airproof – and store below 0° C (freezer).
