The Science Behind Perfect Plant-Based Cheese

Thanks to Ajinomoto’s expertise, we have developed a technology that simplifies industrial processes, such as producing grated plant-based cheese, without compromising its stretchability and meltability after heating.

The first enzyme acts on starch, selectively breaking its branched chains. This reduction in starch entanglement improves water retention, increase resistance to aging, and provides a smoother texture.
The second enzyme targets proteins, breaking them down to improve melting and stretchability when heated.
Finally, our Transglutaminase acts on proteins to create protein bonds, which increase firmness upon cooling, allowing for efficient shredding.

Easy to use, ACTIVA® DA can be introduced at the first step of the preparation of a plant-based cheese with all the other ingredients.

Clean labelling solution, none of the ingredients of ACTIVA® DA have a technological effect on the final product and can therefore be considered as processing aids.

ACTIVA® DA is certified Halal and Kosher, in addition to its vegan, vegetarian status, and its does not contain GMO nor any allergen (Regulation (EU) n°1169/2011). AFE produces ACTIVA® DA in its factory in the north of France, which is certified FSSC 22000, ISO 9001, ISO 14001, ISO 45001, ISO 50001.

Meeting the Demand for Vegetarian and Lactose-Free Pizza
