How we use ACTIVA® FV in vegan nuggets?

1 Hydrate the textured protein with cold water
2 Grind the hydrated textured protein through the 8 mm plate
3 Mix the textured protein with cold water
4 Add functional ingredients and ACTIVA® FV and mix until the mass is homogeneous
5 Add vegetable oil to the dough and mix until the mass is homogeneous
6 Form the dough into nuggets of ~ 25 g each
7 Cook the nuggets
8 Store and freeze
