How we use ACTIVA® EB in bacon?

Meat selection: Pork belly meat

Brine preparation: 100 liters of brine with 10%-20% of injection

Tumbling process: 1 to 3 hours depending of the size of meat and tumbler

Mix ACTIVA® EB slurry with meat
