1 Meat selection: Pork belly meat
2 Brine preparation: 100 liters of brine with 10%-20% of injection
3 Tumbling process: 1 to 3 hours depending of the size of meat and tumbler
4 Mix ACTIVA® EB slurry with meat
5 Mold and press
6 Smoke and dry
7 Cooling (3°C)
8 Slice and Cut
