BEEF BINDING
The use of ACTIVA ® BB allows a better valorization of off cuts to realize further cost saving, standardized and portion controlled in term of shape and weight.
Good binding on beef meat until 10 of brine injection with ACTIVA ® BB.
How we use ACTIVA®BB in beef?

Selection your piece of meat. Choose trimmings or larger pieces

Squeeze and disrupt meat using grinder with auger alone (or auger and possibly one blade)

Addition of ACTIVA® BB-water slurry

Filling into casings or molds. Apply vacuum if possible, maximum time until filling is 30 min
5
Storage at a cold temperature

Slice the meat
